"Everybody in the world recognizes ‘Neapolitan Pizza’ and ‘Turkish coffee;’ this tradition [salt-rising bread] doesn’t seem to be as widely known. Even a lot of people around here don’t know about it.

It really makes me think about the things that get that [UNESCO] designation … Can these regional traditions be elevated in the same way? … As much as UNESCO and the West Virginia humanities Council might say, ‘You know, we really want individuals and groups who are practicing these traditions to come forward and identify themselves and promote their own traditions,' the reality is that there almost always has to be some kind of intervention and filtering through an ‘expert.’”
